After a day of sightseeing, a walk through the forest or time at the beach, Footloose Drifters like a meal they can prepare and enjoy wherever they’ve stopped. Their Thai beef salad is a favourite: quick to make, easy to eat outdoors, and full of fresh flavours.
It may not be the first dish that comes to mind when you think of camping food, but that’s part of the appeal. As Footloose Drifters told us, the location can make a good meal even better.

Footloose Drifters’ Thai Beef Salad
Fresh, zesty and full of flavour, this is a meal you can make in a frypan or wok while you’re on the road — or at home.
Ingredients
- 500 g beef rump or sirloin, thinly sliced
- 2 tbsp sweet chilli sauce
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tbsp olive oil, or your preferred oil
- 1 cup mixed salad leaves
- 1 carrot, grated or julienned
- 1 red capsicum, thinly sliced
- 1 cucumber, sliced
- ½ red onion, thinly sliced
- ¼ cup fresh coriander, roughly chopped
- 2 tbsp roasted peanuts, chopped (optional)
- Lime wedges, to serve
Method
- In a bowl, whisk together the sweet chilli sauce, soy sauce, lime juice, brown sugar and garlic. Set aside.
- Heat the oil in a large frypan or wok over medium-high heat. Add the beef and cook for 2–3 minutes until just browned. It will continue to cook in the dressing.
- Pour over the sauce and toss to coat. Remove from the heat and let it rest for a few minutes.
- In a large bowl, combine the salad leaves, carrot, capsicum, cucumber, red onion and coriander.
- Add the warm beef on top. Drizzle with a little extra sweet chilli sauce if you like, and sprinkle with peanuts.
- Serve with lime wedges and enjoy.
Footloose Drifters’ tip: Adjust the heat by adding more or less sweet chilli sauce. For extra crunch, add crushed cashews or a sprinkle of sesame seeds.
